Eggplant in an Apple Tree


I went with my Thai friend to the Ocean Market today. I fell in love with this Chinese eggplant and its beautiful purple skin.

  1. I feel the same way about eggplant as John Landbeck does about okra. I wonder if he likes eggplant?

  2. And how does John feel about okra? I'm guessing he doesn't like it. Our eggplant was FABULOUS in green curry this evening. Highly recommended. I especially like the little green Thai eggplant. You must try some!

  3. well, you've got me there...the little green ones are very edible in curry. they take on the curry flavor nicely and the texture is just right. Several times when I happened to have some green tomatoes at the end of Summer, I have put them in curry just "hoping" that they would be like the green eggplant. The tomato is ok, but too tangy. It's mostly the eggplant parmesan or fried eggplant that turns my tummy.
